What better way to begin the journey to a healthy body than with an alkaline soup? Being naturally alkaline, this soup will concurrently nourish the body and detoxify acids and toxins. With a myriad of vitamins, minerals, antioxidants, healthy fats and mineral salt, your body will be left hydrated and functioning in tip-top shape.

Consuming pre-digested food (like the blended soup below) allows your digestive system to take a break. Since the foods are already broken down, it is easier to assimilate the nutrients. These nutrients can then help with the detoxification process, releasing acids from the indulgent foods we all too often cannot deny. Of course, we all like to zig and zag with our diet now and then, so it is important to incorporate liquid-based, alkaline foods into the diet regularly.

The goal of an alkaline diet is to support your body’s mandate to maintain the delicate balance of an alkaline pH. When your body becomes mineral deficient and/or overly toxic, it leads to an acid pH. When the pH becomes acidic, the body has to turn to its own mineral reserves (think the bones and teeth) to recruit minerals in order to get back to alkaline. When this occurs, these precious minerals are stolen, which leads to weak bones and teeth, setting the stage for cracked teeth, osteopenia and osteoporosis. This is where the incorporation of alkaline foods, like this soup, becomes so important. A soup like this will provide a supply of alkaline buffers to escort acids from your body fluids and tissues, preventing the minerals from being stolen from your teeth and bones. Did we mention it tastes delicious as well?

Alkalizing Creamed Spinach & Dill Soup
serves 1

Ingredients:

1 long English cucumber, roughly chopped small
1-3 Tbsp liquid (coconut water or filtered water)
1 avocado
1/2 clove garlic
1 thumb ginger
3 Tbsp fresh dill
3 Tbsp cilantro
1 cup spinach, packed
1/8 tsp Himalayan salt
1 Tbsp extra virgin olive oil
2 Tbsp vegetable confetti: minced veggies to add some crunch (i.e carrot, radish, green onion, tomato, celery, or jicama)

Directions:

Place cucumber in blender, and blend to liquefy. You may need to scrape down and encourage it and perhaps add 1-3 tablespoons coconut water or filtered water.
Next add avocado, garlic, ginger, dill and cilantro, spinach, salt and blend until smooth.
Add olive oil and blend just to combine. If your soup is still a bit too thick, thin further with a little more liquid.
Pour into serving bowl and top with vegetable confetti of your choice (I love green onion), as well as a fresh grind of pepper and an extra drizzle of olive oil.
