A healthy cookie mix in a jar is the perfect way to create a charming low-waste gift this year. Not everyone on our list is ready to embrace our low-waste gift ideas in lieu of more traditional holiday gifts. If you’re in the same boat, this deliciously giftable idea shouldn’t leave anyone feeling any less merry.

These little honey-colored oat biscuits are mercifully less sweet than the majority of biscuits. A little spice or zest could work nicely with the delicate coconut notes, and they are perfect for tucking into the children’s lunch boxes. This pre-made mix also makes a wonderful gift.

Oat, Coconut + Chia Seed Cookie Mix In A Jar
Makes about 18 biscuits

Ingredients:

For the cookie mix:
11/2 cups rolled oats
11/4 cups spelt or buckwheat flour
2/3 cup rapadura or coconut sugar
1/2 cup desiccated coconut
3 Tbsp chia seeds
1/2 teaspoon baking soda
pinch of sea salt

To bake: 
1/4 cup melted coconut oil or unsalted butter
2 Tbsp water

Directions:

Layer the cookie mix ingredients in a jar, pop the lid on, and store in the pantry until you are ready to bake.

Preheat the oven to 350°F and line a tray with baking paper.

Pour the jar of ingredients into a mixing bowl, add the melted coconut oil or butter and water, then stir to combine. Allow the mixture to rest for 5 minutes.

Using your hands, roll the mixture into small balls about the size of golf balls and place 1-inch apart on the baking tray. Press down lightly on each ball to flatten.

Bake for 12 to 15 minutes, or until golden, then allow to cool on the baking tray. The biscuits will keep in an airtight container or jar for up to 1 week.
