Grilled Eggplant with Chamomile-CBD Feta, Basil + Pine Nuts

1 pound Japanese eggplants (about 2-3)
extra virgin olive oil
sea salt and black pepper
¼ cup plus 2 tablespoons of ‘Chamomile & CBD’ infused French feta
¼ cup pine nuts, very lightly toasted
1 tablespoon of concentrated chamomile tea
Contents of 4 Sagely CBD + Stress Blend pills (2 eggplant garnish, 2 within the feta)
fresh basil leaves
fresh chamomile flowers for garnish

Heat a grill (or pan) to medium-high. Trim ends of eggplants and cut lengthwise into ¼ inch thick slices.  Brush both sides with oil and season generously with salt, pepper and contents of 2 Sagely CBD + Stress blend powder pills.  Brush grill with oil and place the eggplant.  Turning once, until soft and lightly charred – usually about 2 minutes each side.  Let cool.

To make the chamomile concentrate: Bring 1/2 cup of water to boil.  Drop in 4 tea bags of organic chamomile tea and let steep for 10 minutes.

To make the chamomile & CBD French Feta: Mix one tablespoon of the ‘chamomile concentrate’ with the French feta and the contents of 2 Sagely CBD pills. Continually folding and mixing in the ingredients until it is a smooth consistency.

Cut each eggplant slice in half crosswise.  Divide chamomile feta and pine nuts evenly among slices, placing them on one end of each and gently pressing pine nuts into cheese to adhere.  Roll up eggplant and secure with a cocktail skewer or toothpick.  Garnish with chamomile flowers and basil.
