orange vanilla pops

When we recently caught up with recipe creator and cookbook author Rachel Mansfield for our In the Kitchen With series, one thing came through clearly: her best recipes are the ones that make everyday cooking feel easier without sacrificing the fun. That same spirit is all over her new cookbook, More, Please!, including these nostalgic orange vanilla pops.

Inspired by the Creamsicles Mansfield loved as a kid and rediscovered through her own sons, the recipe requires just four ingredients and a few minutes of prep. The result is creamy, citrusy, freezer friendly, and far easier than tracking down the original in the frozen aisle.

One summer, my son came home from camp yelling, “MOM! I HAD AN ORANGE! ICE CREAM! POPSICLE!” And in that moment, I realized he’d discovered Creamsicles. And why are they weirdly hard to find in the store nowadays? I love that my kids are getting into them now (I loved them as a kid, too), and this four-ingredient situation means I don’t have to search high

and low for them in the store. If you’ve been following me for a while, you know I do a lot of Popsicle-adjacent stuff, but I’d never done an orange-vanilla flavor, so it was time for this to join the family. And dare I say, I think these are the new favorite!

2 medium oranges, peeled (about 1½ cups of fruit), 1¼ cups plain Greek yogurt or coconut yogurt, 2 tablespoons maple syrup or honey, 1/2 teaspoon vanilla extract

In a blender, add the oranges, yogurt, maple syrup, and vanilla and blend until completely smooth. Divide the mixture into ice pop molds and freeze until very firm (I like to let them set overnight).

To serve, run each ice pop mold under warm running water to help loosen the pop.
