Marcella Hazan’s Famous Tomato Butter Sauce

Ingredients:

2 lbs fresh, ripe tomatoes, prepared as described below
5 Tbsp butter
1 medium onion, peeled and cut in half
salt to taste
1 box Baia pasta, cooked al dente, according to box instructions
freshly grated cheese, as desired

Directions:

Plunge the fresh tomatoes in boiling water for a minute or less. Drain them and, as soon as they are cool enough to handle, skin them, and cut them into coarse pieces.

Put the prepared fresh tomatoes in a saucepan, add the butter, onion, and salt, and cook uncovered at a very slow but steady simmer for about 45 minutes, or until it is thickened to your liking and the fat floats free from the tomato.

Stir from time to time, mashing up any large pieces of tomato with the back of a wooden spoon.

Taste and correct for salt. Before tossing with pasta, you may remove the onion (as Hazan recommended) and save for another use, but many opt to leave it in.

Toss sauce with pasta and serve with freshly grated cheese. Serve alongside salad and toasted pieces of bread.

Basil & Arugula Salad with Lemon Shallot Vinaigrette

Ingredients:

1 bunch of basil leaves, stems removed
1 bunch of arugula
3-4 Tbsp extra virgin olive oil
juice from 1/2 lemon
1/4 shallot, minced (or more if desired)
freshly grated cheese, as desired

Directions:

In a large salad bowl, toss together basil and arugula leaves.

In a small bowl whisk together olive oil, lemon juice and shallot. Season with a little sea salt and freshly ground black pepper.

Pour dressing over salad and mix thoroughly. Top with freshly grated cheese.

This is a bright, simple and delicious salad on its own, but it’s also great with avocado, pine nuts and cherry tomatoes.
