Spring is swinging and we’ve got greens on our minds — and our menus. This simple snap pea dressing recipe from Celeste Wilson of The True Spoon packs in the greens and tastes amazing on literally any salad.

Condiments and dressings are a genius way to sneak in an extra portion of greens. This one features fresh snap peas, anti-inflammatory cilantro, green onion and little else. Whirl up a batch in the blender and keep it in a cute jar in the fridge.

When you’re hungry — whether you have five minutes or all night to prep — simply throw some fresh and fermented veggies together and drizzle this green goddess dressing on top…

Green Goddess Dressing on salad

Snap Pea Green Goddess Dressing


1 cup snap peas
1 clove garlic
1/4 cup of cilantro leaves
2 Tbsp green onion, chopped
1/2 lemon, juiced
1 generous pinch of salt
2 Tbsp unsweetened almond milk
2 Tbsp olive oil


Add all ingredients, omitting olive oil, to food processor and blend until smooth (about 1 minute). Add olive oil and blend until incorporated (about 10 seconds).

Pour directly onto dish or store in an air-tight container for up to a week in the fridge.
