Condiments and dressings are a genius way to sneak in an extra portion of greens. This one features fresh snap peas, anti-inflammatory cilantro, green onion and little else. Whirl up a batch in the blender and keep it in a cute jar in the fridge.

Snap Pea Green Goddess Dressing
Ingredients:
1 cup snap peas
1 clove garlic
1/4 cup of cilantro leaves
2 Tbsp green onion, chopped
1/2 lemon, juiced
1 generous pinch of salt
2 Tbsp unsweetened almond milk
2 Tbsp olive oil
Directions:
Add all ingredients, omitting olive oil, to food processor and blend until smooth (about 1 minute). Add olive oil and blend until incorporated (about 10 seconds).
Pour directly onto dish or store in an air-tight container for up to a week in the fridge.
