This tart is so packed with vitamins, minerals and antioxidants from all these wholesome raw ingredients, there’s no need to add anything processed or calorie dense. Berry Ginger Cream Tarts with Raw Almond Crust
Serves 2
Ingredients:
For the base:
1/4 cup almonds
1/4 cup cashews
1/4 cup oats
1 tsp sesame seeds
3 dates soaked in hot water
1 tsp Earl Grey tea (or a single tea bag)
1 tsp cinnamon
For the berry layer:
1 frozen banana
handful of frozen berries (I used strawberries)
For the minty green layer:
1 frozen banana
handful of spinach
a few mint leaves
For the chia layer:
1 Tbsp chia seeds
1/4 cup milk of your choice (I used almond milk)
1/4 tsp ginger
kiwi slices (optional)
Directions:
Combine chia layer ingredients into a small bowl and refrigerate until assembly (at least 15 minutes).
Discard the water from the soaked dates and place into a food processor with the remaining base-layer ingredients and process for 3-4 minutes until dough forms and mixture is finely blended.
Press the base firmly into a small cake tin (I used a 4-inch diameter tin) lined with baking paper and freeze until ready for assembly.
Next blend the frozen banana and the berries in the food processor or blender until smooth – around 2 minutes.
Pour the mixture onto the base layer and place in the freezer for a few minutes while you prepare the next layer.
Next blend the minty green layer ingredients until smooth.
Spread the chia layer mixture onto the berry layer and add a few slices of kiwi (optional). Next spread the minty green mixture over the top and place in the freezer for 15-20 minutes.
Take the tin out of the freezer, take the slice out, remove the baking paper and top with your favorite toppings like goji berries, coconut, sesame seeds, etc.
Slice and enjoy!
