Transform yourself into a morning person with this gorgeous blackberry overnight oats recipe by our blogger obsession, Green Kitchen Stories from their new cookbook, Green Kitchen Smoothies. We live for their deliciously beautiful aesthetic! 

Have you tried overnight oats? If not, trust us when we say these little jars of goodness are LIFE CHANGING. This version includes the magic of berries and honey, but like all overnight oats, it’s packed with healthy fats, fiber, protein and tastes like cookie dough. Grab-and-go breakfast has never looked (or tasted) so good…

This is the ultimate breakfast for late sleepers. Maximize your time in bed by preparing the oats the night before and storing it in a sealable glass jar in the fridge. That way, in the morning all you have to do is grab it and go for the quickest healthy breakfast ever! The oats and chia seeds will keep you going through lunch, and the combination of blackberries, honey and vanilla is simply super tasty.

BLACKBERRY OVERNIGHT OATS
Serves 2 (or 1 large serving)

Ingredients:

1 cup fresh ripe blackberries (or frozen, thawed)
1 cup plain unsweetened yogurt (for a vegan alternative use coconut yogurt or organic GMO-free soya yogurt)
1–2 Tbsp quality raw honey
½ tsp ground vanilla or vanilla extract
½ cup rolled oats (choose certified gluten-free if allergic)
2 Tbsp black chia seeds

To serve:
slices of a firm but ripe banana

Directions:

Put the blackberries, yogurt, honey and vanilla in a blender and blend on a high speed until completely smooth.

Taste and adjust the sweetness to your liking by adding more honey if necessary.

Pour into a bowl and stir in the oats and chia seeds. Arrange the banana slices around the inside of two sealable medium-sized glass jars or a large one (as featured in the photo).

Pour the smoothie on top and serve chilled (to give the oats and chia seeds a chance to soak) with spoons.
