After the last course of our Friendsgiving with blogger Danielle Bernstein, we invited everyone into the kitchen where we presented a platter of roasted apples fresh from the oven. Danielle poured salted caramel over the apples, and Sarah followed up with vanilla ice cream and a brown butter-almond crumble topping. Everyone grabbed a fork and dug in!
We came up with a healthier version of our dessert recipe exclusively for The Chalkboard Mag. It still feels naughty… but it’s not!
Warm, baked apples fresh from the oven are topped with a maple-almond sauce you’ve got to taste to believe, vanilla frozen yogurt, and crunchy toasted almonds. Perfect for fall dinners, especially Thanksgiving…
Naughty Vegan Baked Apples
Ingredients
For the baked apples:
8 Honeycrisp apples (peeled, cored, and sliced)
juice of 1 lemon
¼ cup coconut oil, melted
¼ cup plus 2 Tbsp brown or coconut palm sugar
1 Tbsp ground cinnamon
½ tsp freshly grated nutmeg
2 tsp cornstarch
½ tsp kosher salt
vanilla frozen yogurt
maple-almond sauce, recipe below
toasted almonds, recipe below
For the maple-almond sauce:
¾ cup pure maple syrup
¼ cup almond butter
2 Tbsp coconut oil
2 tsp ground cinnamon
½ tsp Maldon sea salt
For the toasted almonds:
1 tsp coconut oil
⅓ cup raw almonds, chopped
1 tsp brown or coconut palm sugar
sprinkle of Maldon sea salt
Directions
For the baked apples:
Preheat oven to 425F. Toss all ingredients except frozen yogurt, maple-almond sauce and almonds in a large bowl until apples are coated. Transfer to a baking sheet or dish and bake for about 30 minutes, tossing once or twice in between, until apples are soft and golden.
For the maple-almond sauce:
Combine all ingredients in a small saucepan over medium heat; whisk until melted and combined. (Depending on the texture of your almond butter, you may want to blend the sauce in a blender to smooth it.) Serve warm.
For the toasted almonds:
Melt coconut oil in a small skillet; add almonds and sugar and cook over medium heat, stirring, until toasted. Sprinkle with sea salt to taste.
Serve the warm baked apples with maple-almond sauce, frozen yogurt and toasted almonds.
