Can’t decide which superfood to use in your morning meal? Use them all! This superfood parfait is packed to the brim with all of our health food favorites – chia, fresh berries, spiced ginger, shredded coconut, cashew milk, the list goes on! We asked Instagram sensation Lee Tilghman to share one of her recipes that has us drooling all over our phones. She knows the way to our hearts: overly packed mason jars of frozen goodness and layers of rainbow crunchy toppings. Here’s Lee with a few notes on how to get all your superfoods in before 10am…

As spring approaches, it’s important to take advantage of the bounty of fresh fruit nature has to offer and the warmer weather too. Many times in the spring and summer, I find myself leaving the house in the morning and not returning all day. I’m that much more spontaneous! That’s why I developed this on-the-go smoothie parfait just for The Chalkboard. This recipe is perfect to make in advance and bring with you all day long because you can seal it in the mason jar and place in your bag for those spontaneous spring days and nights.

Berry Chia Parfait

Ingredients:

Chia pudding:
3/4 cup cashew milk
2 tbsp maple syrup
pinch sea salt
1/2 cup chia seeds
1 tbsp unsweetened coconut shreds

Blueberry Layer:
1.5 frozen banana
1/2 cup frozen blueberries
1 date
1/2 cup cashew milk

Strawberry Layer:
1 tsp shredded ginger
1 frozen banana
1 cup frozen strawberries
1/2 cup cashew milk

Directions:

Chia Pudding:

Place ingredients in a 12 oz. mason jar, shake and stir very well for 1 minute. Let sit for 2 minutes, then shake again for 30 seconds. Leave in fridge for 30 minutes or overnight. Chia seeds will expand to make a delicious, gelatinous pudding, perfect for your layering.

Blueberry Layer:
Place all the ingredients into a high speed blender and blend until smooth.

Strawberry layer:Place all the ingredients into a high speed blender and blend until smooth.

Assembly:
Get a larger mason jar or parfait glass. Lay 1” of chia seed pudding on the bottom of the char. Then add a layer of the blueberry parfait. Add one layer of your granola. I use Purely Elizabeth Blueberry Granola. It’s my favorite! Add one more layer of chia pudding. Add a layer of strawberry smoothie. Continue to add your layers until you run out of ingredients. Top with mulberries, buckwheat groats, hemp hearts, and fresh blueberries. Drizzle with almond butter if you feel. Enjoy!

    • You can sub any sort of nut milk for this recipe, cashew milk is just my recent favorite.

    • Hi Alyssa!

      You can use any sort of nut mylk of your choice for this recipe, I just had cashew milk on hand so that’s what I used. almond milk should work perfectly fine too!

  5. If you’re only layering 1” of the chia seed pudding to make the layered dish then what does one do with all the leftover pudding? How long does it last in fridge of course?
