Fall is upon us! Some may find it hard to stay on track with healthy food choices based on the changing seasonal produce. This gluten-free pumpkin smoothie is the perfect transitional beverage to welcome a new season rich with fall flavors.
The Problem: When summer fruits – exceedingly popular in smoothies – go out of season, many smoothie options seem to fly out the window. Fall flavors tempt even the best behaved to reach for sugar-filled options such as pie and cider!
The Solution: Fall fruits and vegetables, pumpkin included, are chock full of carotenoids and bioflavonoids that can boost immunity, promote heart and eye health, and lower the risk of some cancers. They’re a great way to incorporate fall flavors into delicious creations that ensure you’re not missing out – and in fact, ensure you’re getting plenty of nutrients, particularly vitamin A, known to promote healthy vision, boost immune function, and ensure great skin health. And for those with allergies, this smoothie is gluten-free.
Pumpkin Spiced Smoothie
1/4 cup, plus 2 tsp, unsweetened pumpkin puree
1/2 frozen banana
1/4 cup greek yogurt
1 tsp chia seeds
1 tsp cinnamon
1 tsp nutmeg
Pinch of allspice
Pinch of cloves, if desired
4-6 ice cubes
1/2 to 1 cup water to thin, as needed
Blend to desired consistency, starting on a lower speed and gradually increasing. Use water to thin if needed. Sprinkle additional cinnamon on top as desired and enjoy!
