Meghan Markle once shared with us her love for NYC Chelsea Market’s Doughnuttery and the crepe Suzette at Bar Suzette (read up on her NYC faves), but apparently, her famous sweet tooth extends across the pond to London’s charming Violet Bakery too.
Kensington Palace recently took to Twitter to announce that “for their wedding cake Prince Harry and Ms. Meghan Markle have chosen pastry chef Claire Ptak, owner of the London-based bakery @violetcakes.” They revealed that the couple have requested “a lemon elderflower cake that will incorporate the bright flavours of spring. It will be covered with buttercream and decorated with fresh flowers.”
The baker behind it all is Claire Ptak, a self-taught recipe developer from California who trained at Chez Panisse, Alice Waters’ pioneering Berkeley restaurant, before dropping everything and moving to London to be with her British beau and eventually open her own bakery in the hip London borough of Hackney.
Claire focuses on using seasonal, organic “low intervention” ingredients in her cakes, biscuits and whoopie pies. This includes limited edition buttercreams flavored with everything from fruit purees to homemade dark caramel with sea salt and Madagascar vanilla bean. Everything out of Violet Cakes and The Violet Bakery Cookbook (with a forward written by the legendary Mrs. Waters herself) is made to showcase the best natural offerings of each season. A royal treat indeed.
Grab the cookbook to bake up a little celebration of your own and try this stunning fig leaf ice cream recipe we’ve shared from it’s pages — a perfect pairing for royal elderflower layer cake, if you ask us…
