Summer Spinach Salad

Who doesn’t love a great excuse to buy a basket of strawberries? This recipe has become a quick favorite with friends, clients and book purchasers from my cookbook Cooking Healthy Together. It’s packed with antioxidants, vitamins and minerals – keeping your body lean and clean. Try making it for a party, summer BBQ, healthy potluck or just because!

Strawberry Spinach Salad
Serves 2-4


1 bag (10 oz.) spinach
1 cup (5 oz.) strawberries
2 tablespoons crumbled Feta cheese
1⁄4 cup sliced almonds
freshly ground pepper


Whisk together olive oil and vinegars in a small bowl; season with salt and pepper to taste. Set aside.2 tablespoons olive oil
2 tablespoons white balsamic vinegar
1 tablespoon balsamic vinegar
Pinch of sea salt
Fresh ground pepper

How to Make:

Wash and slice strawberries. Set aside.

Place spinach, strawberries, feta cheese and almonds in a large serving bowl.Slowly add the prepared dressing, a little at a time, and toss until all ingredients appear well coated.Serve with freshly ground pepper.
