Your Friends’ Expectations have been mounting since you first sent that group text. I’m going to effortlessly host everyone at my home for the perfect summer meal, you think, cracked-out on coffee and manically speeding through Pinterest for the perfect aesthetic. The truth is, sometimes our own perfectionism can get in the way of sending out that invite at all. In a complete departure from that attitude, we’re taking this genius advice from integrative nutritionist Jennie Miremadi to make summer hosting easy AF. Namely, by buying a store-bought, organic rotisserie chicken (gasp!) and pairing it with a sexy homemade chimichurri sauce.

Jennie’s other ideas – for picnicking or al fresco nights out back – also include mixing a few chic, but easy, store bought items (olives and figs, anyone?), with a little low-effort cooking.

Don’t let your pride keep you from taking the culinary low road with that store-bought chicken — whipping up this fresh chimichurri sauce should give you just the sense of accomplishment you’re looking for…

Fresh Chimichurri Sauce

Ingredients:

1 ½ cups fresh Italian parsley, chopped
7 garlic cloves, peeled and chopped
1/3 cup red wine vinegar
3/4 cup extra-virgin olive oil
1 Tbsp lemon juice
1 tsp crushed red pepper
1 Tbsp fresh oregano, chopped
1/2 tsp Himalayan pink salt (plus more to taste)

Directions:

Add parsley, garlic, vinegar, olive oil, lemon juice, red pepper, oregano and 1/2 teaspoon salt to a food processor and begin to pulse.

Turn food processor to low and process until all ingredients are fully incorporated.

Adjust salt to taste.

Serve and enjoy!
