gluten free ginger Apple Fritters 2

This recipe from Jolene Hart’s book, Ignite Your Light is an instant energy-shifter with its aromatic apples and ginger that bake into protein-packed bites.

Jolene uses fresh ginger rather than dried to access the spectrum of phytochemical compounds in the whole root (catch up on all the benefits here). Steep a little of your extra ginger in hot water and add a spoonful of raw honey for an anti-inflammatory tonic that pairs well with these bites!

Gluten-Free Ginger Apple Fritters with Raw Honey Glaze 

Makes 20

INGREDIENTS:
Coconut oil for greasing
1 cup blanched almond flour
1 cup gluten free flour blend (I like Bob’s Red Mill 1-to-1)
1/4 cup arrowroot starch
2 tsp baking powder
1/2 tsp baking soda
Scant 1/2 tsp unrefined salt
3/4 cup unsweetened non-dairy milk
1 tsp apple cider vinegar
2 tbsp maple syrup
1 1/2-inch piece of fresh ginger, scrubbed and grated with a microplane grater
1 1/2 cups peeled and diced organic apples (about 1 1/2 apples)
3/4 cup raw cashews
1 tbsp raw honey
5 tbsp water
1/8 tsp almond extract

DIRECTIONS:
Preheat oven to 375 F. Grease two mini muffin pans with coconut oil.

In a large bowl, combine dry ingredients. In a smaller bowl, whisk together milk, apple cider vinegar, and maple syrup. Pour wet ingredients into dry, and fold in ginger and apples. Fill each muffin cup until it’s slightly mounded with batter. Bake for 20 minutes, until golden.

While fritters bake, combine glaze ingredients in a high-powered blender and process until smooth, scraping down the sides if needed. Remove fritters from oven, cool slightly and serve drizzled with raw honey glaze.
