Tangy, spicy and totally clean, buffalo cauliflower wings are the ultimate sharable snack for those who like a little fire.

The gluten-free recipe comes from Nealy Fischer, founder of The Flexible Chef and author of Food You Want: For The Life You Crave, and it’s everything we’re wanting to eat during movie marathons and cozy afternoons inside. It only requires a few basic ingredients, and it’s likely you already have them in your kitchen. For an even quicker cooking process, make your homemade buffalo sauce in advance and keep a jar in the fridge.

Buffalo Cauliflower Wings
Serves 2 to 4

Ingredients:

For the cauliflower:
2 heads of cauliflower
2 eggs
salt + pepper

For the coating:
¾ cups gluten-free all-purpose flour
1 tsp paprika
1 tsp garlic powder
salt + pepper

For the sauce: 
¼ cup buffalo wing sauce (any brand)
2 Tbsp coconut oil, melted
1 Tbsp honey

For pan frying:
1/4 cup olive oil

Directions:

Cut cauliflower into bite size florets. Beat eggs and season with salt and pepper. Dip cauliflower into egg mixture.

In a large mixing bowl, combine flour, paprika, garlic powder, salt and pepper. Dip the egg-covered cauliflower bits in the flour mixture, coating evenly. Set aside.

Whisk wing sauce, coconut oil and honey, and set aside.

In a skillet, heat olive oil on medium heat until hot but not smoking. Shallow fry the coated cauliflower bits until lightly golden and crisp. Flip to ensure all sides cook evenly.

Place on a reserved plate and drizzle sauce over cauliflower (use only enough to season the heat to your preferences).

Serve immediately, or reheat uncovered in the oven.
