Every night since we started this thirty day RAW thing we’ve been dividing up cooking responsibilities. This has worked out wonderfully because it’s not like we can just stop at a drive-in and pick up a raw vegan food item. We have chosen Wednesdays to do our big sit-down dinner and it was wonderful! We had FRIED RICE AND SUSHI!!!! Of course it was all imitation and nothing cooked and yet ohhh sooo delicious!
You can try this wonderfulness too!!!
Ingredients: 2 heads Cauliflower, 1 red bell pepper diced, 2 ears of corn, 2 grated carrots, 2 finely dices cucumbers, 3 stalks of celery finely diced, 2 cloves of garlic, soy sauce, ginger, lemon, optional stevia
Directions:
Fried Rice
Pulse cauliflower florets and garlic in food processor until “riced”, add celery and pulse, transfer to a large bowl, mix in other vegetables and set aside
Dressing- combine a quarter cup of soy sauce, one lemon, ginger, and stevia to taste
Mix “rice” and dressing and thoroughly combine -Allow to sit until serving time
*grate fresh ginger over the top
Sushi
Using a vegetable peeler, peel off several long vertical thin strips. Take two thin strips of the cucumber and roll around two fingers. Roll cucumber into a cylinder. Then take the inner most layer of the cucumber and press down to make a base. Mash avocado and place in the center of the cucumber rolls.
