Summer is finally on its way and we’re ready – so is Jamie Oliver! Ready for the sunshine, the sundresses, the later than usual sunsets and all the foods we only eat in this sunniest of seasons – like popsicles. Here is Jamie’s sweet and easy recipe for protein and antioxidant-packed pops that will please even even the biggest kid!
These yogurt pops are great alternatives to sugary lollies found in regular stores. They will satisfy anyone with a sweet tooth regardless of age. Perfect for a hot summer day, or any time of year – whenever you fancy really.
Feel free to use different fruit along with the banana – berries work particularly well. Raspberries are really tasty and you can use them here, but I tend to stay away from them because of the seeds.
This recipe incorporates frozen fruit which is great as it will have been picked at its best and frozen in time to keep in as many of the vitamins and minerals as possible. Experiment with different frozen fruit until you find your favorite flavor combination.
Jamie's Memorial Day Yogurt Pops
Makes 6 popsicles- Equipment
chopping board
knife
food processor or blender
spatula
paper cups or plastic molds
lolly sticks - Ingredients
2 small ripe bananas
1 cup frozen strawberries or frozen blueberries
2 cups fat-free natural yogurt
2 Tbsp runny honey - Directions
Peel and slice banana and put it into a food processor or blender with the frozen berries, yogurt and honey. Whiz it up on a low setting until really smooth.
Divide the mixture between 6 paper cups or plastic molds – you want about 4 ounces in each.
Place the pops in the freezer for 10 minutes, then gently poke a lolly stick into the center of each one. Place back in freezer for at least 3 hours, or until solid.
