Chai Spiced Toast With Apple Butter + Ricotta

Mmm, chai…the spice blend that could fuel the entire winter season. We’re sharing a recipe from our gals at Darling that is just too good (and easy) to pass up, merging two of our favorite obsessions, chai spice and our beloved layered toast – hold the avocado, add a creamy ricotta. You’ll crave this for breakfast, lunch, dinner and dessert…

While it may be the spice of the season, it can get pretty repetitive when it’s just on repeat in a mug.

Amy Rothstein of Brooklyn-based Dona Chai (a current favorite around the office for its subtle, not-too-sweet flavor) put together this complete morning-to-night menu using chai in some rather inventive ways. We’re sharing the recipe for chai apple butter ricotta toast to get the most out of this delicious spice.

Chai Apple Butter Ricotta Toast
yields 1 cup of apple butter

Ingredients:

10 medium apples, peeled and chopped
8 oz chai (we’re loving dona chai)
1 Tbsp lemon juice

4-8 oz ricotta cheese

your favorite crusty bread, toasted

Directions:

Combine apples, chai, sugar, and lemon juice in a large saucepan. Place mixture over medium-high heat, and cook, stirring often, until apples are broken down, about 45 minutes. Mash any large pieces of apple with large wooden spoon to help them break down.

Reduce heat to medium. Continue cooking, stirring occasionally, until apples are completely broken down and butter is very thick and dark, about 1.5- 2 hours. Remove from the heat, and let stand to cool.

Make sure your bread is toasted to perfection, and spread chai apple butter onto bread first. Then layer with creamed ricotta cheese, and enjoy.

For a twist to the recipe: Try blending equal parts of ricotta cheese with apple butter for a delicious ricotta-based chai apple cream cheese.
