infused water

Basil, pear + black pepper Infused water
Makes 1 pitcher

Ingredients:

1 Tbsp black peppercorns, plus extra for serving
2 pears
5 sprigs of basil
5 cups of water
ice, optional

Directions:

Roughy crush the peppercorns using a pestle and mortar, then scatter them in a large jug. Leaving the skin on, core then thinly slice the pears and add these to the jug. Pop in the sprigs of basil, then fill the jug with the cold water.

Leave to infuse in the fridge for at least two hours. Taste before serving and add an extra sprinkling of peppercorns to each glass, if needed.

Tip: It’s well worth crushing whole peppercorns for this infusion—they provide far more flavor than pre-ground pepper.
