Rich in protein and antioxidants, this tofu-based dessert could easily be eaten for breakfast or as a midday snack. You could even add fresh berries and sliced banana for a yummy pudding parfait!
Raw cacao powder makes this pudding special. Instead of adding highly processed cocoa powders, I use raw cacao because it is a super food ingredient, loaded with antioxidants like iron, calcium and loads of magnesium. Plus, the flavor is amazing! This recipe has only 5 ingredients, so you can get your chocolate fix in a flash with this healthy treat recipe.
Silky Cacao Pudding
Serves 2-4
- 16-19 oz silken tofu
- 2 tbsp raw cacao powder
- 3-4 tbsp agave syrup
- 1-2 tbsp light coconut milk
- 1/4 tsp pink salt
Fresh fruit: I added fresh organic raspberries and one sliced banana.
Directions:
1. Add all the ingredients to your blender. A high-speed blender like a Vitamix works best.
2. Blend and serve, or chill in fridge until ready to serve.
