Crispy Lettuce Wraps

If you're in your second or third trimester, remember that you should be eating every two hours, so quick and easy snacks are essential. Another time-saving snack are these deliciously crisp, open-face lettuce wraps. Simply take one lettuce leaf and smother it with a few scoops of fuss-free guacamole (mashed avocados, fresh lime juice, pinch of Himalayan sea salt). Next, pile on organic cherry tomatoes, fresh garbanzo beans and nuts of your choice (I like walnuts and pecans). Two of these wraps keep me nice and satiated.
