broccoli avocado soup the body book

Whether we’re breaking out our blender or glugging down our green juice, we love any chance we get to drink our nutrients. And while we could pound bottles of Greens 3 all day long, we love to eat a heartier version of greens too. Something creamy and savory. Something like…green soup.

Lucky for us, the team over at Our Body Book have just the recipe. We figure if the soup is good enough for Cameron, it’s good enough for us! We’ll be whipping up this broccoli avocado soup all summer long and hoping for Cameron-level results….

Summer Greens: Broccoli Avocado Soup

Ingredients:

2 heads of broccoli
1 tsp dried oregano
squeeze half a lemon
1 medium avocado
1 tbsp olive oil
3/4 c warm water
salt and pepper

To garnish:
1/4 avocado
coriander or cilantro

Directions:

Wash your broccoli and chop into small sections. Don’t discard the stalk — just remove the skin and dice.

Steam the broccoli for 5 minutes and transfer to a food processor. Add the rest of the ingredients and process until thick and creamy. The mixture will be warm from the steamed broccoli, but if you want, heat in a pot for a few minutes.

Serve and enjoy! Find your favorite bowl and garnish with salt and pepper, avocado and herb of your choice.

  1. Greens 3 is good but has no fiber! Fiber is so important for colon health and to promote satiety. A hearty green/vegetable soup trumps a greens drink any day! People would be wise to eat most of their vegetables rather than substitute with a veggie drink (cutting out the finer also leaves nothing to balance the sugars in green juices = unhealthy insulin spikes).

  3. Made this soup today – couldn’t have been easier, faster or more tasty! Well…MAYBE tone down the oregano a dash, but all in all, I give it 5 stars!
