Chef Jeffrey’s simple take on these delicious Healthy Chocolate Disks with Pomegranate Arils are the perfect cooking project for dads and their kids as a Mother’s Day surprise – they’re so quick and easy, they turn out rather elegantly, and kids can add their own toppings. They’re also a great go-to for home cooks like us who are always on the hunt for the simplest route to healthy snacks and desserts. These chocolate disks are packed with nutrition and as versatile as can be – we’re all about the pomegranate and hemp seeds he’s used here, but if you’re looking for different flavors or even colors, anything from organic rose petals and lavender to pink salt and granola would work here. Healthy Chocolate Disks with Pomegranate Arils

Ingredients

1 lb Venezuelan El Rey Chocolate Discos
1/4 cup extra-virgin coconut oil
1/4 cup almond milk

Directions

Melt the Chocolate Discos (or your favorite vegan chocolate bar) with a almond milk and extra-virgin coconut oil for extra melt-in-your-mouth goodness.

Dollop and form thin disks on a wax-paper- or parchment-paper-lined tray. Gently press hemp or pomegranate seeds into the chocolate (or whatever toppings you’d like). Chill in freezer and eat.
