These coconut nectarine summer gummies are going to be your favorite summer snack! They’re made with whole, natural ingredients, including nectarines, which are rich in beta-carotene and a good source of fiber. They’ve also got healthy fat from coconut milk, and they’re loaded with protein-rich, gut-health boosting, grass-fed beef gelatin. These yummy gummies are simple to prep and make a fun and delicious treat!

Coconut Nectarine Summer Gummies

Ingredients:

5 Tbsp + 1 tsp Vital Proteins, grass-fed, pasture-raised beef gelatin
1 ¾ cups organic nectarines, chopped
1 cup full fat organic coconut milk
1/2 cup purified water
pinch of Himalayan pink salt
stevia to taste (optional)

Directions:

In a small saucepan, mix gelatin and 1/2 a cup of cold water with a fork until a thick paste forms. Set aside.

Add nectarines, coconut milk and salt to a Vitamix or other high-speed blender. Blend on high speed until ingredients are combined into a smooth liquid. Add stevia to taste, if desired.

Pour nectarine-coconut mixture into an empty saucepan and heat on low until hot.

Transfer hot nectarine-coconut mixture to the saucepan that contains the gelatin and heat on low, stirring continuously, until the gelatin is completely dissolved.

Turn off heat and pour nectarine-coconut mixture into silicone gummy molds.

Refrigerate for approximately 1½ – 2 hours, or until set. Once set, remove from molds. Eat and enjoy!

    • Thank you so much, Beth! I haven’t tried it with oat milk or almond milk, but I can’t see why it wouldn’t work in place of the coconut milk. And, I bet it would be delicious!
