ever since our recent coconut-crazed photo shoot, we’ve been freaking out over coconut everything. Our whole team went nuts at our tropical shoot and, to celebrate, we’re sharing this round-up of our favorite coconut recipes of all time.
Dive into our list – it doesn’t disappoint. We’re not talking basic coconut smoothies here folks, we’ve got coconut alfredo sauce (seriously) spirulina bowls, and vegan sushi made with our favorite nut used in place of sushi rice!
Coconut Cream + Berries | This rose-infused coconut cream dessert is as light and lovely as can be. The recipe comes from Meredith Baird’s thematically-relevant cookbook, Coconut Kitchen, which features coconut-based recipes for breakfast, lunch, dinner, dessert and everything between.
Coconut Spirulina Bowl | In this nutrient-rich breakfast bowl, the non-dairy creaminess from coconut yogurt is used to offset the “green” flavor of spirulina. Topped with mulberries, nuts and seeds, this gorgeous blend of superfoods is healthy enough to start the day with, and delicious enough to eat again later for dessert.
Coconut Vegan Sushi | Young coconut meat serves as a fish substitute in this crazy-creative vegan recipe. Thinly sliced veggies replace rice and add a crunch factor that makes these rolls as refreshing (and healthy) as a bowl of salad. The personalizable element makes building these a fun and interactive experience to share.
Coconut Alfredo Sauce | The creamy goodness of traditional alfredo has some serious competition with this vegan version in the game. Coconut meat gives the texture of this sauce substance, while miso and nutritional yeast add a depth of flavor that parallels the richness of cheese (minus the dairy, of course). Toss in some spiralized veggie noodles and you have a plant-based imposter that’s nearly better than the original.
Coconut Quinoa Pudding | Luscious, comforting rice pudding gets a superfood makeover in this clean quinoa-based recipe. Coconut milk provides the creamy texture we cherish in the O.G. version, but with more nutrition and less heaviness. Pile on the toppings for a filling breakfast or grab a spoon and dig in as is.
Chai Coconut Smoothie Bowl | We love smoothies. We love bowls. This colorful coupling of two of our favorite eats is everything we would want first thing in the morning or as an afternoon pick-me-up. The combination of creamy coconut and cozy chai tea creates a base flavor that tastes the way sleeping in feels – but with more nutrients, vitamins and minerals.
