Go ahead and lick the spoon, the bowl, and the beaters. We’ve been waiting for a good, easy, it’s-all-in-the-box baking brand to pop-up in healthy grocery stores and new brand Foodstirs has finally nailed it.

We love baking from scratch, but there are moments in life when we’re longing to just get down to the business of frosting a cupcake with friends.

Foodstirs founders, actress Sarah Michelle Geller and friends Galit Laibow and Greg Fleishman felt the same and when they couldn’t find the kind cakes mixes they grew up on with clean ingredients, they decided to get into the baking biz.

Foodstirs mixes are made with heirloom grains, chemical free food coloring, and biodynamic sugars. We tried their pumpkin spice pancake mix to whip up this batch of protein-rich pumpkin spice waffles in the office and they were quickly devoured.

Pumpkin Spice Waffles
serves 4 – 6

Ingredients:

1 cup Foodstirs Organic Pumpkin Spice Stacks Pancake Mix
1 free-range egg, room temperature
2 Tbsp grass-fed butter, melted and cooled slightly
1/2 cup milk or non-dairy substitute (we love Pressed Juicery’s classic almond milk; we used PJ’s protein-rich Movember milk)
1/4 cup melted ghee for cooking

Directions:

Preheat a waffle maker to medium heat. Beat egg until slightly foamy. Whisk in milk (or milk substitute) and butter. Add Foodstirs’ pumpkin spice pancake mix and mix until fully incorporated.

Use a pastry brush to coat the inside of the waffle maker with melted ghee. Depending on the size of your waffle maker, use 1/3 – 1/2 cup of batter for each waffle. Cook waffles according to the manufacturer’s instructions, or until golden-brown on the outside and spongey on the inside.

Serve warm with desired toppings. We love maple syrup, coconut whipped cream, fresh berries and a generous sprinkling of granola.
