Start Here: Raw Recipes in Action

You’ve decided to venture into the world of raw food. Whether it’s adding more fresh produce to your plate or completely overhauling your entire meal plan, there’s no question that this choice is a good one. It’s also a tasty one!

Now that you’ve made your first raw staple recipe, Sour Cream, you might be wondering where to go from here. It all depends on what you’re craving! The possibilities are truly endless – making this raw staple a valuable addition to your refrigerator. I continue to come up with new ways of incorporating Sour Cream into a variety of tasty dishes, from breakfast to dinner and even desserts. Here are a few easy ways to put this wonderful staple into action:

In smoothies: Add a few generous tablespoons of Sour Cream with a drizzle of agave and a teaspoon of vanilla. Your smoothie will have a creamy flavor boost, with the addition of protein from the cashews.

In salad dressings: For a rich and creamy vinaigrette, whisk a couple tablespoons of Sour Cream into your favorite oil & vinegar dressing. Enjoy with greens of your choosing.

As a dip for veggies: In a small mixing bowl, add 3/4 cup Sour Cream with 1 tablespoon Onion powder, 1 teaspoon Garlic Granules, 1 tablespoon fresh minced Dill, 1 teaspoon minced Shallot, a pinch of ground Celery seed, Salt and Pepper to taste. Serve with a veggie platter and watch it disappear!

As a quick dessert: Combine 1/2 cup Sour Cream with 1 cup frozen fruit of your choice. Puree in a high-speed blender or food processor until creamy. Mix in 1 teaspoon of vanilla and liquid sweetener to taste. Enjoy this with additional fresh fruit for a sweet way to start or end your day.

Creamy Tapenade

Yields roughly 1.5 cups

 


Step 1: Tapenade Ingredients
In a mixing bowl combine the following:

  • 1/2 C chopped Red Bell Pepper
  • 1/2 C chopped Celery
  • 1/4 C minced Sundried Tomato
  • 1/4 C Capers or Olives
  • 1/8 C dried Currants or Raisins
  • 4 Tbsp C minced Chive
  • 4 Tbsp C minced Shallot
  • 4 Tbsp minced fresh Dill
  • Salt & Pepper to taste

Mix everything together and let it sit/chill in the fridge for about an hour so the flavors can merry.


Step 2: Making your Creamy Tapenade

  • Transfer all of the ingredients from Step 1 into your food processor.
  • Proceed to chop/pulse your ingredients until they have broken down to an evenly minced texture.


Now that you have a finely minced tapenade mixture, the only thing left to do is add the creamy element.


Mix in anywhere from 1/4 to 1/2 cup of Addicted to Veggies Sour Cream into your tapenade. It’s up to you how creamy you’d like it to be.

I recommend enjoying this creamy tapenade on sliced cucumbers, tomatoes, or your favorite flaxseed crackers. Serve it as an appetizer paired with a veggie platter or as pre-made canapés. It won’t last long and your guests will be asking for the recipe!
