The beauty of living in this day and age is that there are so many outlets for discovering talent in the health and wellness world: Pinterest, Facebook, Twitter, and of course, our personal favorite, Instagram. And it was Instagram that led us to the mouth-watering, health-inspiring food creations of McKel Hill of Nutrition Stripped.

McKel is a health and wellness coach, and registered dietician, whose mission is to inspire you to get one step closer to health by learning simple ways to nourish your body, starting with eating more raw greens. Her recipes are completely addicting, in a good way, offering new and inventive ways to recreate the health basics like cauliflower crusted pizza, massaged kale salad, avocado chocolate mousse, and of course, the green smoothie. So here we are sharing with you a New-Year’s-resolution-friendly, green smoothie recipe, nutrition-stripped style.

Stripped Green Smoothie
serves 2 to 4

Ingredients:

1 cup filtered water
1 cup coconut water (or double the filtered water)
1 large bunch organic lacinato kale or regular kale (5 heaping handfuls)
1 large head of organic romaine
5-7 large stalks of organic celery, chopped
1 organic apple, cored and chopped
1-2 bananas, chopped
½ cup organic cucumber, chopped
½ cup cilantro
½ cup parsley
Juice of 1 lemon/Meyer lemon
dash of cayenne (optional)
dash of cinnamon (optional)

Directions:

Using a high speed blender, pour filtered water and coconut water into the blender.

Add chopped celery stalks and romaine lettuce first, and turn on low speed.

Puree this mixture, and then gradually increase the speed and add chopped kale.

Add cilantro and parsley, and then add the chopped apple, cucumber and bananas.

Turn down to low speed and add the juice of the lemon.

If desired, add cayenne and cinnamon. Blend until creamy.

At this point you may add more water to thin out the smoothie. Garnish with your favorite healthy nuts, berries and seeds if you wish. Serve and enjoy!
