sweet potato toast

Toast without the “toast”? Potentially an abomination, but in this case, a dream we didn’t even realize we had come true. Sweet potato toast – as in, toast made on a slice of sweet potato – is a new thing we spotted floating around the interwebs and we’re obsessing over the concept.

Inspired slash starved after reading this post, we started making our own sweet potato toast in our HQ’s toaster oven, and were surprised by how easy it actually was. See our instructions below.

We top our sweet potato toasts with just about whatever is on hand – avocado, tahini, leftover kale salad etc. It’s the perfect fix for midday hunger that packs in nutrients, fiber, vitamins and minerals. The options are endless and way too much fun to mix and match.

How To Make Sweet Potato Toast

Ingredients:

1 large sweet potato, rinsed and scrubbed clean
toppings of your choice (we love almond ricotta, avocado or a poached egg)
salt, pepper, red chill or other seasonings, to taste

Directions:

Slice a small piece off of the outside of the sweet potato to create a flat, stable surface. Position the sweet potato on the cutting board and cut lengthwise into 1/4 inch-thick slices.

Add slices directly into a toaster, and toast on high for full two rounds. Check in occasionally to ensure the sweet potato doesn’t burn. Carefully remove the slices (chopsticks are great for this if you’re using a traditional pop-up toaster) and top with just about anything!
