Peaches are in peak season, and,  while we’re not at all opposed to eating one whole and blissfully raw over the sink, we also love a recipe like this grilled peach salad that let’s them come to the dinner table beautifully. Peaches are packed with minerals like calcium, potassium, magnesium, iron, phosphorous and zinc and they grill up like champs when paired with peppery arugula – full of vitamins A and K, plus bright lemon and salty vegan cheese.

This simple and refreshing grilled peach salad from Laurel Gallucci of Sweet Laurel Bakery is everything you should be eating this summer.

Grilled Peach + Arugula Salad
Serves 4

Ingredients:

4 cups arugula
3-4 peaches, sliced
1 shallot, sliced into thin strips
1/4 cup vegan cheese, crumbled (or make your own)
lemon dressing

For the dressing:
juice of 1 lemon
1/4 cup olive oil
1 clove of garlic
pinch of salt
fresh ground pepper to taste

Directions:

Prepare grill.

Place arugula in a large bowl. Add pecans, shallots and cheese. Set aside while you prepare peaches.

Grill peaches about 2-3 minutes on each side.

Toss with dressing and enjoy!

For the dressing:

Place all ingredients for dressing in a small food processor or blender. Pulse for 1 minute.

Dressing can be made ahead and will keep in fridge for 3-4 days.
