This hearty whole grain salad from certified holistic nutritionist, Kristin Dahl, is a clean eating classic. Akin to salads we’re scooping up constantly from Whole Foods and our fave healthy hotspots, this grain salad is loaded with plant protein, fiber and powerhouse herbs.

Detoxifying Grain Salad With Lemon + Herbs

Ingredients:

1 cup cooked short-grain brown rice
1/2 cup chopped parsley
1/2 cup chopped cilantro
1/3 cup toasted pine nuts
1 small sweet potato, diced into blocks
1/2 cup basil or mint (optional)
chopped cooked chicken, chickpeas or tempeh (optional)

For the dressing:
1/2 tsp Himalayan sea salt
1 tsp freshly grated lemon zest
1 tsp ground cumin
3 Tbsp fresh lemon juice
3 Tbsp extra-virgin olive oil

Directions:

Bake the sweet potato at 400 for 20 to 30 minutes. Cook the rice while the potatoes roast. Allow both to cool slightly.

Chop the herbs and toast the pine nuts. Make the dressing. Combine all ingredients together and serve!
