We created the ‘In My Fridge’ series because nothing is more inspiring than seeing how our community brings living well to life. Rummage through Jules’ earthy NYC kitchen and grab some great ideas like these easy roasted veggie recipes to put on rotation…

Food philosophy in one sentence:

Eat as close to the earth as possible, and eat to nourish the mind, body, spirit.

Always in my fridge:

Coconut yogurt, matcha, homemade cashew milk, nut butters and fresh veggies and fruits.

7 recipe staples always on hand:

In random order: gluten-free oats, avocado oil, coconut oil, adaptogens, grass-fed collagen peptides, Himalayan pink salt and pepper.

Must-have munchies:

I like to snack on fruit with nut butters. My favorite is pears with almond butter and a sprinkle of cinnamon!

Fave condiments:

I actually don’t use a lot of condiments

Ingredient that makes everything taste better:

Himalayan pink salt + avocado oil (mmm crispy Brussels).

Go-to proteins:

I love baking wild-caught salmon or a local grass-fed chicken on my cast iron. For plant-based protein, I enjoy quinoa, nuts and seeds.

Best bargain:

Meal prepping on Sunday nights has saved me so much time and money! I love planning out my food for the week. It helps me feel more put together and is one less thing for me to think about.

Best label-reading tip:

The less ingredients the better. Also, look out for added sugar. It’s everywhere!

Fave veggie + what you make with it:

Ooh, it’s a tie between crispy Brussels and sweet potatoes. I can’t have one without the other. I bake them both at 400 degrees with avocado oil, salt and pepper. Just add on a baked salmon and that’s my favorite dinner right there!

Must-have pantry staples:

Siete grain-free tortilla chips, quinoa and gluten-free rice pasta.

Sweets and other indulgences:

Hu Kitchen Dark Chocolate Bars and Van Leeuwen’s vegan chocolate ice cream!

Dairy or non-dairy faves:

I love making my own cashew milk! The idea of it always intimidated me, but now that I have a Vitamix and a nut milk bag, it’s really easy to do.

Skip labels that read:

Carrageenan, any additives or sweeteners and anything you can’t pronounce. In general, I try to do much of my shopping in the bulk section to reduce the amount of packaged foods I consume.

Favorite splurge:

Once in a blue moon, I treat myself to a jar of $25 Coconut Cult probiotic yogurt. I feel so good after I eat it, and it helps when I’m feeling bloated. So I usually splurge after I’ve come back from traveling and need a good reset.

For last-minute entertaining:

Veggies and hummus, smoked salmon from Whole Foods and Siete chips!!

Favorite places to shop:

NYC has several awesome farmer’s markets that are fun to stroll. I prefer to shop for local meat and produce, because it’s more fresh – and supporting local farmers is always a plus. Whole Foods has a wonderful selection of local foods, as well. So, between Whole Foods, the new 365 and markets, I’m set!

Simple go-to recipe:

Well, I’m sure by now you know I love my salmon and Brussels! But if I’m craving a dessert or need to make something for a party, I love this Easy Raw Vegan Cheesecake recipe!
