We’re sick of hearing how obsessed with avocados everyone is! Just kidding. We’ll never tire of avocados, guacamole and chocolate avo pudding. Ever.

Chef Jeffrey Nimer of Haute Chefs L.A. blew everyone’s minds at our recent Malibu party with these avocado croquettes and we’ve not been able to stop thinking of them since. Don’t be deterred by their impressive look here on the tray or their fancy name – “croquettes”, these little bites are incredibly simple and jaw-droppingly delicious.

These croquettes are full of those glorious healthy fats we need to feed our brain and nourish our skin so we look, feel and host our best this season…

MINI AVOCADO CROQUETTES
Serves 4

Ingredients:

2 avocados
½ onion, finely chopped and diced
½ – 1 cup panko crumbs (more can be added if needed)
salt and pepper to taste
2 Tbsp olive oil (for cooking – add more if needed)

Directions:

In a medium bowl, combine the diced onion, avocado and salt and pepper.
Add the panko crumbs, half a cup at a time, mixing in between. Wait a few minutes and decide if you need to add more. The goal is to find the right consistency to form little patties (about 1-inch high and 3-inches across). If your mixture is too thick, add a little bit of water. If it is too moist, add some more. This isn’t an exact science – you have to figure out what will work best for you!

Let mixture settle. Once mixture is settled, scoop out mixture and make your avocado patties or croquettes to desired size.

In a large skillet, heat the olive oil over medium heat. Using your hands, make your avocado patties or croquettes and place them into the hot skillet. Just like making cookies, you’ll most likely only be able to cook 6-8 patties at once, and will have to do at least 2 batches.

Cover the patties and let them cook for about 7-10 minutes or until golden brown. Using a spatula, carefully flip the patties. The bottom of the patties should be a nice brown color. Let them cook on the other side for about 5-7 minutes depending on the thickness/size. If you want, you can flip them a second time to get the bottom a darker brown.

Remove the patties from the skillet and let them cool on a plate or wire rack.

Serve with basil aioli or accompaniment of choice.
