We’ll have what she’s having. The only thing more captivating than Abigail O’Neill’s healthy, tropical Instagram life (maybe you caught a glimpse from her TCM takeover a few weeks back?) are the superfood, super planty recipes that fuel it.

Below, this paradise dweller and raw chocolate cheerleader is sharing a drool-inducing dish from her cookbook, Model Chocolate — our ultimate resource for finding raw, vegan ways to coddle a cacao craving (this chocolate face mask included)…

This is more of an idea than an exact recipe. Adapt it to suit your day-to-day needs. You can use fresh fruits and superfoods of all kinds, even sprinkling layers with seeds, nuts and superfoods such as maqui, acai berry, chia seeds, bee pollen, cacao nibs, raw chocolate-flavored muesli (adds crunch) – whatever you have on hand at the time. I’ve even created a mint-cacao strawberry version! The possibilities are endless. (Pictured trifle uses blueberries and goji berries.)

RAW CACAO CRÈME TRIFLE
Serves 2

Ingredients:

For the fresh fruit layer:
Choose fresh fruits in season; use creamy and juicy textured fruits.

For the cacao crème:
1 cup fresh raw walnuts, rinsed
1 cup water
scraped seeds of one vanilla pod
1 tsp coconut sugar, raw honey or maple syrup
2-3 tsp of raw cacao powder
1 tsp probiotic powder of your choice, or 2-3 probiotic capsules, opened

Directions:

Measure walnuts into the blender and rinse by covering with water. Swish around to rinse well. Drain. Blend rinsed walnuts with one cup of water, adding all other ingredients and blending until smooth. Your delicious crème is now ready for use. For not-so-thick crème, add more water until desired texture is achieved.

Be sure to purchase super-fresh, mild-tasting walnuts for making this crème, or simply use your favorite natural organic yogurt in place of crème, adding cacao powder, vanilla and sweetener as desired. Coconut yogurt works brilliantly!

To assemble:

Layer fresh in-season fruit with walnut crème or yogurt, superfoods and sprinkles of your choice. This satisfying trifle can easily be prepared the night before for an elegant-looking nutritious breakfast.
