Eva Amurri Martino got it from her mama – and has just become one herself. Living out that sweet transition in life – from being someone’s child (her mother just happens to be Susan Sarandon) to having one of her own, Eva has her hands full with all that new mamahood requires. Add meeting and marrying the love of her life to the equation (it all came rolling in in just under three years!) and Eva has a full plate.

Under the circumstances, many women might choose to take on less in life for the time being, but, for Eva, the natural impulse was to begin a new passion project, Happily Eva After, a blog detailing her take on life as a new wife and mother, including turns on the topics of home, style, and food, all with the one theme of “balance” in mind — a theme we really love around here, if you haven’t noticed.

Read through our morning with Eva and get her adorable recipe for pink toast and eggs (we’re making this immediately!)

Mornings with Eva Amurri Martino

My alarm is set for…

6 a.m. I like to have an hour or so to myself before everyone else is awake.

I can’t start my morning without…

Caffeine! (I’m a mom cliché.) And a big glass of water.

Breakfast is normally…

An open-faced toast meal. I love sprouted wheat toast with either mashed avocado, lemon and sea salt; or soft boiled eggs, goat cheese and strawberry preserves.

Favorite morning beverage is…

I love coffee with goat milk, or chai tea with organic almond milk and raw honey.

Daily uniform this fall…

Rag and Bone skinny jeans, Tory Burch sweaters and Timbalands.

My favorite moment in the morning is…

Getting Marlowe from her crib. She is so funny and sweet in the mornings – my husband and I literally fight over who gets to see her first thing.

On the best mornings I…

Have enough time to play with my daughter a little bit before I have to start working. Sometimes we even go for a walk to get coffee as a family.

I start working by…

Making a list of the goals for the day. I’m a very visual person and I love lists!

Morning are normally filled with…

Lots of emails. Lots of emails.

I get my creative juices flowing by…

Going for a walk, reading magazines and books and girls’ nights out. I love running ideas by my girlfriends!

Healthiest daily habit…

I drink a lot of water daily. I think it has made my skin better and makes me more energized.

I’m most obsessed with this currently…

Snapchat! It’s like watching TV stations of all the people you’re interested in. Mine mostly features my kid, behind-the-scenes blog stuff… and me lip synching to the pop songs I love.

I’m usually listening to…

Old Motown hits, or ’90s hip hop… or Taylor Swift.

My favorite morning distraction…

Blogs. So. Many. Blogs.

Always thinking about lunch at…

La Scala. I can’t tell you how often I crave that chopped salad (with a side of penne arrabiata!).

My current mantra:

“I didn’t always know what I wanted to do – but I knew the kind of woman I wanted to be.” – Diane Von Furstenberg

The recipe I’m making:

Eggs and pink toast. (Marlowe loves eating this too!)

Eva Amurri Martino’s Eggs + Pink Toast

Ingredients:

2 eggs
1 piece of sprouted grain bread
3 Tbsp organic goat cheese
1 Tbsp organic strawberry preserves
Maldon salt

Directions:

Soft boil the eggs by placing them in boiling water for five minutes. Meanwhile, toast the bread. In a bowl, mix together goat cheese and strawberry preserves. Spread the goat-cheese mixture on the toast, and top with the two eggs, scooped out of their shells. Sprinkle the top with Maldon salt. Enjoy while hot!
