As innocent as it may look, green smoothie recipes like this one from author Julie Morris are powerful tools to pack high doses of nutrition into your daily grind! Julie has perfected more than a few power-packed smoothies in her book Superfood Smoothies, a flippable tour through recipe after recipe that help to stuff amazing amounts of whole food nutrition down into one delicious glass! As if we needed any convincing to blend up this super-cravable mint concoction, here’s Julie with a few thoughts on what makes this green smoothie such a stand out!

Tucked beneath the very convincing ice-cream-like flavor in this smoothie, a wealth of beneficial spinach awaits you! It’s so good it almost makes a person wonder why spinach isn’t used in all minty treats. I love how the cacao nibs provide a bit of dark-chocolate crunch without being overpowering.

Mint Chip Green Superfood Smoothie
Makes two 18-oz servings

Ingredients

2 cups frozen spinach
2 cups frozen bananas
1⁄4 cup raw cashews
3 Tbsp cacao nibs
2 Tbsp (packed) fresh mint leaves, minced
1 tsp vanilla extract
2 cups rice milk (original variety)
1⁄2 cup coconut water
sweetener, to taste (optional)

Directions

Blend all the ingredients together until smooth. Taste, and sweeten as desired.

  4. Going to use homemade cashew milk instead of rice, and sub coconut butter for the cashews. I’ll prolly throw a tsp of maca powder in too, just cuz why not. Can’t wait!

  5. Just made this for the 2.5 year old in my care. He’s a tough one to get fruits and veggies into, but has loved smoothies since he was a baby. He LOVED this smoothie. We made a couple modifications (I didn’t have any coco-water or cacao nibs or fresh peppermint leaves, but I had coconut oil, cacao powder, and peppermint extract so I used those instead). The mint really kicks this smoothie up a notch. The frozen parts made the smoothie taste fresh and frosty, and even the color (a cool sea foam green) is lovely. This recipe is a winner and a keeper.

  6. I am OBSESSED with this smoothie! I had coconut/almond milk instead of rice water, and I didn’t have any cashews… I just used what I had, and it is still absolutely amazing! My mint plant is running low, so I think I’ll sub Young Living peppermint oil for fresh mint leaves next time. My 2 year old loves it, and it makes me happy to find whole food smoothies that he loves. Thank you for sharing!!
