Studies have shown that a healthy breakfast sets us up for a day of success – but we can’t help but be wooed by the thought of piping hot waffles, fluffy stacked pancakes, and the ultimate breakfast indungence: french toast. Slather on some syrup, and we’re goners. No wonder so many of us are back to our sweets and treats, New Year’s Resolutions in the dust, come February 1st…

Thankfully, our go-to gal for a year’s worth of healthy recipes, Jessica Murnane of One Part Plant, has heard our cries for brunch-worthy dishes hat won’t break our resolutions…or our nutritional bank. A Year Of Breakfast is filled with simple, delicious, plant-based breakfast recipes for every month of the year. Each recipe is vegetarian, gluten-free, dairy-free, soy-free, and refined sugar-free – is this real life?  Jessica’s vegan french toast recipe is totally healthy and totally plant-based. Here she is with the deets – make this heavenly brunch this weekend!

People often ask me about the hardest part of changing my diet. One of the hardest thing was figuring out new breakfast options. Ones that weren’t just a whole bunch of veggies and fruits thrown into my blender in a panic. Don’t get me wrong, smoothies and juices are great. They’re my go-to response whenever anyone asks for a good plant-based breakfast option. But after giving that same answer over and over again, I came to realize that not everyone wants a liquid breakfast 365 days a year. I know I don’t. Some mornings they just don’t feel all that exciting. And when you’re cooking breakfast for your friends/in-laws/that hottie that finally slept over, smoothies just don’t cut it. So I came up with some new options with some of my favorite people from around the web. Un-guilty Vegan French Toast
serves 4

Ingredients:

For the French toast:
1/2 cup cashews (soaked for a few hours, overnight is best)
1 cup almond milk
1/2 cup water
1 tsp vanilla
1 tsp cinnamon
dash of salt
8 pieces sprouted or gluten-free bread
2 cups berries of your choice

For the coconut cream:
1 can full-fat coconut milk, refrigerated overnight
1 tsp maple syrup
dash of vanilla
dash of salt

Directions:

For the French toast:
Heat pan on stovetop to medium heat. Combine all ingredients (except the bread) in a blender. Blend until smooth. This might take up to 5 minutes, depending on the power of your blender. Pour into a bowl and dip each side of the bread into the batter. Cook until browned on both sides (about 3-5 minutes per side).

Spread a dollop of whipped cream between two pieces of french toast. Add a layer of berries. Top with a dollop of cream and berries. Add a little maple syrup on top for a sweeter breakfast.

For the coconut cream:
Remove from the fridge – but don’t shake the can. Open the can and remove the cream from the top (the cream and water will have separated). Mix with maple syrup, vanilla and salt.
